This four-part knife range for portioning and filleting fish from the northern seas was developed in collaboration with Michelin-starred chef Edwin Vinke from the Netherlands. The three long, narrow filleting knives with either a flexible or rigid blade are ideally suited to separating the fish fillets from the skin, while the large knife with its strong spine ensures a clean, gliding cut along the bones. Made of stainless chromium-molybdenum-vanadium steel, the blades aren’t just extraordinarily hard, they’re also finely ground and blue-glazed using the traditional method that Solingen is famed for – a process that makes the blade extremely smooth. The curved handles are available in a choice of German walnut burl or easy-to-grip POM plastic; they take the strain off the hand and ensure the knife is properly balanced. 

Jury
Although the shapes of the blades are mainly dictated by functional requirements and the handles are designed from an ergonomic perspective, the overall look of the knives is nevertheless very harmonious and consistent. In particular, the use of a traditional handle material with such an attractive look and feel signifies the outstanding overall quality of the products.
